Ashton Hills is a name pinot lovers say with reverence. Established on a high, cool site above Ashton, the estate built its reputation on elegant, age-worthy pinot noir long before the variety was fashionable in Australia, alongside taut riesling and a delicate sparkling.
The cellar door is small and the views across the gully are lovely. Tastings here are considered and unhurried — a chance to understand why altitude and aspect matter so much in cool-climate winemaking, and to taste some of the most respected pinot the Adelaide Hills produces.
