The Adelaide Hills is South Australia's coolest mainstream wine region, and that altitude is everything. Vineyards planted between 400 and 600 metres ripen slowly through cool nights, preserving the natural acidity that gives Hills wines their nervy elegance.

The signature grapes

Chardonnay is the regional hero - think citrus, white peach and fine, taut structure rather than the buttery styles of warmer regions. Sauvignon blanc thrives here too, all passionfruit and cut grass, while pinot noir and pinot gris reward the cooler, higher sites.

Above all, the Hills has become South Australia's home of serious traditional-method sparkling, with several producers winning national trophies year after year.
